Just when you are looking for a refreshing fun beverage to serve on a hot summer day or anytime you delight in the flavor of watermelon this drink will be the one! Serving this cocktail is a sure way to cool down while you sip all the invigorating flavors of watermelon, lime and mint. And for the faint of heart, omitting the vodka is totally okay too!
Watermelon Slushie with Vodka

Ingredients:
6 cups of cubed seedless watermelon
6 ounces vodka*
3 ounces lime juice
3 ounces simple syrup**
3 cups ice
fresh cut sprigs of mint leaves
What you will need:
Blender
Cookie sheet
Parchment paper
Directions:
Cut thick slices of watermelon, remove the rind and cut the flesh into bite sized chunks. Put all the pieces on a baking sheet lined with parchment paper. Freeze the watermelon for about an hour until firm.
When ready to make your concoction place the watermelon into the blender and pulse for a few seconds. Then add the ice cubes, vodka, and lime juice. Add some, or all of the simple syrup to your desired sweetness.
Blend until the mixture is smooth and frosty! Pour into chilled festive glassware such as Martini or Hurricane, insert straw and sprig of fresh mint for garnish and bouquet of flavor.
*Keep in mind to adjust the vodka to your specific taste and tolerance. And the non-alcoholic version tastes delicious too replacing the vodka with beverages like mint tea, green tea or kiwi juice! The options are endless.
**Make your own simply syrup...just like the name, so simple! Combine into a saucepan equals parts of water and granulated sugar, i.e. ½ cup sugar and ½ cup of water. Warm the ingredients over medium heat until dissolved. Let cool and transfer to a jar, place the lid on tightly and refrigerate. It's simply good to use for whenever you need it!
