Frittata, which basically translates to 'fried' is a creative way to serve an egg dish complimented by fresh greens, meats and cheeses. Served with artisan breads and your beverage of choice makes for a wonderful presentation for your guests.

1 large onion sliced thin
4 cups fresh baby spinach
2 cups sliced fresh peppers (orange/red/yellow)
2 cups broccoli cut small
2 potatoes sliced (sweet or white)
2 cups chopped cooked sausage or bacon
1/8 cup olive oil
1/2 stick butter
1/2 teaspoon black pepper
1/4 cup grated cheese
1 cup shredded mozzarella cheese
Beat the eggs in a medium size bowl with the grated cheese and black pepper. Heat olive oil on low and then add butter until melted. Raise the heat to medium and add potatoes and cook until they can pierce easily. Add the peppers, onions and broccoli and allow to soften. Layer the sausage/bacon evenly across the pan. Pour the egg mixture on top and tilt the pan to distribute it evenly. Place the fresh spinach on top. Allow the eggs to set on medium heat for about 10 minutes. The spinach will completely wilt down once moved to the oven.
Place the pan to a 350 degree oven for about 20 minutes.
Remove pan from oven and add the mozzarella evenly across the pan.
