Guacamole
by Dolce Vita Baskets
Ingredients:
3 large ripe avocados, soft to the touch
2 tablespoons fresh lime juice
½ teaspoon ground cumin
½ teaspoon salt
3 green onions sliced thin
1 clove of minced garlic
1 minced jalapeño pepper (more or less depending on your preference)
1 small diced tomato (remove seeds)
3 tablespoons fresh chopped cilantro
Directions:
Halve each avocado, remove the pit and make several cuts into the flesh. Scoop out the flesh and place in a mixing bowl and mash lightly with a fork. Add in all the ingredients, except the tomatoes and cilantro, and combine together. Mash the mixture with a fork and blend well being careful not to over mash. The mixture should be 'chunky" at this point.
Fold in the tomatoes and cilantro. Transfer to a serving bowl, cover with plastic wrap and refrigerate for one hour. When ready to serve remove the plastic and place a few sprigs of cilantro on top for garnish.
Serve with tortilla chips or toasted pita triangles. Enjoy!
