Ingredients:
½ cup shortening
2 ½ cups all-purpose flour
½ cup of sugar
½ cup of honey
1 egg
1 tablespoon white vinegar
1 teaspoon baking powder
½ teaspoon baking soda
2 teaspoons Princess Cake emulsion*
Pinch of powdered vanilla
Directions:
Combine all dry ingredients in a mixing bowl, set aside.
In another bowl, beat shortening with an electric mixer on high speed for 30 seconds.Then beat sugar, honey, egg, vinegar, and almond emulsion. Beat until combined. Add the flour mixture and blend together. Shape the dough into the bowl, cover, and refrigerate for 30 minutes so it is easy to handle.
Divide the dough, and on a lightly floured cutting board, roll the dough out to about 1/8 in thick and cut with a heart-shaped cookie cutter. Place at least one inch apart of a greased cookie sheet. Bake for 6 or 7 minutes in a 375-degree oven. The cookies will appear to be underdone but will give the soft consistency desired for this recipe. Place on a wire rack and cool thoroughly. Sprinkle confectionery sugar and decorate as desired.
