Cranberry Apple Stuffing with Triple Sec
by Dolce Vita Baskets
Ingredients:
6 cups onions chopped
3-4 cups of chicken stock
3 cups of chopped apples
4 cups of celery chopped
1 cup of dried cranberries
1 10 ounce package of fresh mushrooms sliced
1 cup of Triple Sec Liqueur or Orange Brandy
14 oz package of seasoned stuffing, cubed style
¼ cup olive oil
1 stick butter
Dash of cracked black pepper
Do not over chop celery/apples, preferably small chunks
You will need a large deep skillet for this recipe and a large glass baking dish
Directions:
Heat butter on low flame in a large skillet until melted, pour in the olive oil. Add onions, stir and cook for a few minutes with cover before adding the celery. Cook the celery with the onions with a small amount of chicken stock. Give a twist or two of the cracked black pepper. You may add small amounts of chicken stock as needed during this process.
Stir in the dried cranberries and chopped apples. Pour in the cup of Triple Sec Liqueur and ½ cup of chicken stock. Add sliced mushrooms and stir lightly.
The mixture should now have retained enough liquid for you to add the croutons. Stir well to absorb all the liquid. If the mixture looks too dry you can add more chicken stock gradually, but just enough for it to be moist but not runny.
Transfer mixture into a large glass bake ware coated with cooking spray.
Bake for one hour uncovered on low- about 275°
Place on wire cooling rack and it's ready to serve! You may cover the dish with plastic wrap and refrigerate overnight. Remove the plastic wrap and warm before serving covered with foil.
